Ingredients for Soft Cantucci:
- 1 1/4 cups granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon baking powder (level)
- 3 medium eggs (at room temperature)
- 7 tablespoons butter
- 1 2/3 cups toasted almonds

Steps for Preparing and Baking Soft Cantucci:
Place the butter in a bowl and melt it in the microwave, alternatively, you can melt it in a bain-marie, once melted, let it cool.
Place the almonds on a cutting board and chop them with a knife into pieces that are not too small because they should be visible when cut.
In a large bowl, put the eggs and granulated sugar, and using a whisk, work the two ingredients well to obtain a homogeneous mixture, add the melted butter and incorporate it with the other ingredients.
Gradually add the flour with the baking powder and almonds, when the mixture begins to blend well, transfer it to a floured surface, work it well, divide it into two parts and form two long cylinders.
Transfer the two cylinders onto a rectangular baking sheet and bake at 350°F for 20 minutes, then take the baking sheet out of the oven, let it cool slightly, and then cut them into diagonal slices, place the cantucci with the cut side up on a baking sheet, bake for 5 minutes, then turn them over and bake for another 5 minutes.
Let the soft cantucci cool before consuming them, store them in a well-sealed tin container to prevent them from becoming soggy.
Notes
You can also brush the cylinders with a beaten egg before baking if you prefer a more golden preparation.
