The creme caramel with instant pot is a pudding based on eggs and milk cooked in the multicooker. After trying the recipe for custard with instant pot, today I want to delight you with this French-origin flan. This recipe is also taken from my book Multicooker (Gribaudo), and as I explain in the instant pot guide, whether it’s called that, or multicooker or electric pressure cooker, it makes little difference, the principle is always the same, cooking desserts in the instant pot saves electricity, time, and helps to eat well. To make the creme caramel in the multicooker, I used an aluminum pudding mold, you can use a bundt cake mold as long as it fits comfortably inside the inner pot of the instant pot. Besides the mold, you will need the rack provided, to pour water on the bottom of the instant pot and place the mold on top.
If you are wondering what function to use for making puddings in the instant pot, the answer is simple, you will only need the pressure function.

Ingredients to make creme caramel in the EPC
- 1.7 cups whole milk
- 3 eggs
- 1/3 cup sugar
- 1 pod vanilla (used)
- 2/3 cup sugar
- 2 tablespoons water
- 4 drops lemon juice
What you need to make the pudding in the instant pot
- 1 multicooker
- 1 Bundt cake mold or pudding mold
- 1 Bowl
- 1 Whisk
- 1 Fine mesh strainer
How to make creme caramel in the instant pot
Pour the milk into the instant pot, add the vanilla pod, and heat the milk with the pressure function, without placing the lid. In about 8 minutes, the milk will be hot.
Pour the sugar into the bowl, add the water and lemon drops, mix well, then place the bowl in the microwave. Start at 800 watts in 30-second intervals until the caramel takes on a nice amber color. Pour the caramel into the mold and let it stick to the walls.
Crack the eggs into the bowl, add the sugar, and beat well with the whisk. Pour the hot milk over the egg and sugar cream and mix again. Strain the mixture into the mold over the caramel.
Pour 4 cups of water into the instant pot and insert the rack. Place the mold on top and close with the lid. Program the cooking of the instant pot with the pressure function, if possible, in low mode, and start cooking for 20 minutes. At the end of cooking, let the creme caramel rest in the instant pot, until it depressurizes. It will take about 10 minutes.
Remove the lid and, with the help of a cloth, remove the creme caramel. Let it cool in the mold and then put it in the refrigerator to chill for 4 hours. Unmold the creme caramel onto a plate and serve.

If you love vanilla a lot, you can add the seeds to the hot milk. Creme caramel can be stored in the fridge, covering the pan with plastic wrap or aluminum foil, for 3-4 days.

If you don’t have its stand, you can use a microwave stand, or you can use 3 ceramic ramekins to place the mold on.
