I love making microwave recipes; it speeds up cooking times and doesn’t require preheating, which allows me to cook energy-efficiently.
The recipe for making microwave carrot farinata is really quick; just grate the carrots, mix them with chickpea flour and water, along with some spices to taste. Finally, cook the mixture in a microwave heating pan, combined with microwaves and grill, to create a delicious protein focaccia. Ingredients for Chickpea Focaccia in Microwave
- 3 carrots (10.5 oz)
- 2 cups chickpea flour
- 7/8 cup water
- 2 pinches salt
- 2 pinches ground cumin
- 2 tbsps extra virgin olive oil
- extra virgin olive oil (spray)
What You Need to Cook Farinata in Microwave
- 1 Microwave Oven with combined function
- 1 Microwave Pan made of heating material (crisp), 8.3 inches
- 1 Mixer
- 1 Bowl
- 1 Hand Whisk
Procedure
Peel and trim the carrots; if they are new, avoid peeling them to keep the fibers, cut them into pieces and place them in the mixer bowl. Chop them finely, in pulses.
Pour the chopped carrots into the bowl and add the chickpea flour, water, and the rest of the ingredients. Mix well with the whisk until a well-blended mixture is formed.
Spray the pan with a little oil, pour in the chickpea and carrot batter and level the surface. Spray the surface with a little oil to form a nice crust.
Place the pan in the microwave base and start cooking for 15 minutes with combined microwave + grill function, at maximum power.
Remove the carrot farinata from the oven and serve hot.
Extra Tips for Vegetable Farinata in Microwave
To lower the glycemic index of cooked carrots, just add 0.5 oz of long-chain inulin to the batter.
