Simple and tasty grilled zucchini rolls with tuna and cream cheese, great to serve cold as an appetizer or a light main course. Ingredients
- 2 zucchini
- 2.82 oz canned tuna
- 2.65 oz cream cheese
- herbs (parsley, mint or basil)
- extra virgin olive oil
- salt
- pepper
Tools
- Grill Pan or non-stick grill
- Bowl
- Strainer
- Slicer or mandoline
Preparation
Wash the zucchini, remove the ends and slice them into thin slices (about 0.08 inches) lengthwise. I recommend using a slicer or a mandoline to get them all the same thickness.
Grill the zucchini on a hot grill pan, adding a pinch of salt and turning them once or twice.
Let them cool, in the meantime, prepare the filling.
Drain the tuna well from excess oil, mash it with a fork and place it in a bowl.
Add the cream cheese, a pinch of pepper, and a handful of your favorite herbs. Mix until you get a creamy and homogeneous mixture.
Distribute the filling over the grilled zucchini and roll them up to form rolls.
Your zucchini rolls with tuna and cream cheese are ready, arrange them on a tray and drizzle with a light thread of oil. If you are not serving them immediately, store them in the refrigerator in a closed container.
Tips and Notes
You can replace cream cheese with another creamy cheese, such as robiola or ricotta.
You can flavor the filling with some grated lemon zest.
You can bake the zucchini instead of grilling them. Let them cool well before adding the filling.
