- 1 clove garlic
- 1/2 cup black olives (or taggiasca)
- 1.8 oz pickled capers
- 14.1 oz peeled tomatoes

Let’s Prepare the Mediterranean Style Salted Cod Together
In a non-stick pan, pour the olive oil, the peeled garlic clove, and a sprig of fresh oregano, let it heat slightly, then add the peeled tomatoes, previously broken or chopped, and cook over medium heat for a few minutes.
In the meantime, take the salted cod fillets and remove the skin, slice the initial part with a knife, then pull the skin with one hand while holding the fish meat with the other. Take the parsley, previously washed and dried, and chop it finely with a knife on a cutting board.
Add the olives and capers to the tomato sauce, season with salt, and also place the pieces of salted cod in the sauce, cover with a lid, and let it cook for about ten minutes.
Remove the lid, add the chopped parsley and a grind of pepper, let the sauce reduce a bit, then turn off the heat. Wait a minute before serving it.
