  • 10 oz sausage (such as toscanelli)
  • 2 tbsps olive oil
  • 1 garlic (clove)
  • 7 oz cooking cream

Steps

  • TRADITIONAL METHOD
    Sauté the garlic and sausage: In a large pan, heat the extra-virgin olive oil over medium heat. Add the whole garlic clove and let it fry until golden, then remove it. Add the crumbled sausage (without casing) and sauté for 8-10 minutes, stirring often.
    Add the cream: When the sausage is browned, pour the cream into the pan. Season with salt and pepper and cook over low heat for 5-7 minutes, until the sauce thickens.
    Cook the pasta: Meanwhile, cook the pasta in plenty of salted water. Drain it al dente, keeping aside a cup of the cooking water.
    Combine: Toss the pasta in the pan with the sauce for 1-2 minutes. If needed, add a bit of cooking water to make it very creamy. Serve immediately.

    THERMOMIX VERSION
    Sauté: Put the garlic and oil in the mixing bowl: 4 min. / 250°F / speed 1. Remove the garlic.
    Cook sausage: Add the crumbled sausage: 8 min. / 250°F / speed 1.
    Prepare sauce: Add the cream, salt, and pepper: 8 min. / 250°F / speed 1. Remove the sauce and set it aside in a large bowl.
    Cook pasta: Without washing the bowl, pour 700 g of water and salt: 8 min. / 250°F / speed 1. At boiling, add the pasta: time indicated on the package / 212°F / counter-clockwise / speed 1.
    Finish: Drain the pasta with the basket and mix it with the previously prepared sausage and cream sauce.
