Today’s recipe for a dressing sauce: fake mayonnaise, aquafaba dressing for salads and vegetables.
Those who follow me know that I am neither vegetarian nor vegan, but I always like to try everything and experiment with new things. Moreover, I like to use aquafaba to create delicious sweet and savory little recipes.
Today I used chickpea brine to create a very delicate sauce, egg-free, perfect as a mayonnaise substitute in sandwiches, for dipping tasty legume balls, and equally good for dressing a nice fresh salad or boiled green beans.
The fake mayonnaise, aquafaba dressing for salads and vegetables is prepared very quickly using only an immersion blender. In two minutes, you will get an exceptional mixture that, after trying once, you will make every time you have aquafaba available.
Now let’s see together, step by step, how to make this recipe.

A Curly one advises
Aquafaba whips better if it is cold so I recommend keeping it in the fridge. The fake mayonnaise, aquafaba dressing for salads and vegetables keeps well in the fridge for a couple of days closed in a jar.
