    I bought a piece of salted cod about 1 kg (2.2 lbs), rinsed it under running water to remove the surface excess salt, then cut it into large pieces (about 4-6 inches).

    I immersed the pieces in a large bowl filled with cold water, ensuring they were completely covered.

    I placed the bowl in the refrigerator for 3 days, changing the water at least 1-2 times a day.

    This long soak in cold water is essential to desalinate the cod and make it soft and ready for cooking.

  • Cooking the Cod:

    After the 3-day soak, I drained the cod and rinsed it again under running water. I then transferred the pieces to a large pot, covering them with cold water.

    To flavor the cooking water, I added a clove of garlic in its skin, a bay leaf, and a few black peppercorns.

    I brought the water to a boil over medium heat, then reduced the heat and let the cod simmer for about 20-30 minutes, or until it was tender.

    To check for doneness, I pierced a piece of cod with a fork: if it flakes easily, it’s ready.

    I drained the cod and let it cool completely before proceeding with the cleaning.

  • Cleaning the Cod:
    Once cool, I broke the cod into smaller pieces, making it easier to remove the bones.

    With my hands, I removed the larger, more evident bones. Then, with the help of a kitchen tweezer, I patiently removed even the thinner, harder-to-find bones.

    I carefully checked each piece of cod, going over it multiple times to ensure all the bones were removed.

    This operation is crucial to achieve a perfectly smooth and velvety creamed cod, without unpleasant surprises!

  • Creaming the Cod:
    I transferred the cleaned and shredded cod into the bowl of the stand mixer. I attached the paddle, ideal for whipping and mixing.

    I started the mixer on low speed and began adding the sunflower seed oil in a thin, steady stream, just as you would when making mayonnaise.

    I continued to let the mixer run on low speed, gradually incorporating the oil until I achieved a smooth, thick, and fluffy cream.

    This process takes about 10 minutes and requires some patience, but the final result will be a soft and velvety cream. Once the desired consistency was reached, I transferred the creamed cod to a serving dish.

    To taste, I added a touch of freshness with a bit of lemon juice and garnished with a pinch of finely chopped parsley.
