Sweet, Soft and Fragrant Apple Madeleine Cake

If you’re looking for an easy-to-make dessert full of soft, fragrant apples, don’t miss the recipe for apple madeleine cake, a preparation that combines the sweetness of Golden apples with the delicate texture of the famous French madeleines!

The apple madeleine cake is excellent at room temperature or warm, and if you want to make it more indulgent, serve it with a scoop of vanilla ice cream and dusted with powdered sugar mixed with ground cinnamon.

HOW TO VARY THE APPLE MADELEINE CAKE?

Here are some ideas to vary this wonderfully fragrant preparation:

• we can make this cake lighter by using plain yogurt instead of butter;

• it will always be delicious by substituting Abate pears for Golden apples, but also by using peaches if in season, or apricots;

• if you like the aroma, cinnamon can be added to the main batter of the cake and not just dusted with powdered sugar before serving the apple madeleine dessert.

Ingredients

  • 4 cups apples (for me Golden)
  • 1/2 cup brown sugar (light)
  • 4 eggs
  • 1 tbsp wildflower honey
  • 1 lemon (juice and zest to flavor the chopped apples)
  • 1 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup butter (softened to a paste)

A delicious recipe …let’s prepare it together?

  • I start the preparation by peeling the apples, removing the core with the seeds, and then cutting them into cubes, drizzling them with lemon juice and finely grated zest.

  • In a bowl, I mix light brown sugar with a generous tablespoon of wildflower or acacia honey, creating a smooth pasty cream.

    I also add the softened butter to a paste and mix the ingredients well with a hand whisk.

  • At this point, I add the eggs and incorporate them into the batter perfectly and with determination.

    I sift the flour with the baking powder and add them to the mixture, stirring carefully to avoid lumps.

    Finally, I pour in the Golden apple cubes and mix everything well.

  • I grease the chosen pan (for me, circular, 9 inches) with the appropriate release agent or butter and flour, and bake in a static oven at 350°F for about 40/45 minutes, depending on our home’s oven characteristics.

  • When baking is complete, I turn off the oven, let it cool completely, then unmold the delicious apple madeleine cake, and after dusting it with powdered sugar, I dive in to taste it…

    Very tasty, rich in apples, and delicious, the rich apple cake with a madeleine-like batter!
