Ingredients for Sun-Dried Tomatoes with Chili Pepper
- 8.8 oz sun-dried tomatoes
- 3 cloves garlic
- 1 1/4 cups vinegar
- 1 1/4 cups water
- 1 chili pepper
- 1 tsp basil (ground)
- 1/2 tsp salt
- 6 leaves bay leaves
- 4 1/4 cups olive oil

Steps for Sun-Dried Tomatoes with Chili Pepper
Bring water and vinegar to a boil in a large pot, and when the solution reaches a boil, immerse the sun-dried tomatoes for about 3-4 minutes, then drain them well and place them on a clean cloth to dry for about 1 hour, dabbing.
Sterilize the jars perfectly; incorrect sterilization could spoil the result.
Peel the garlic by removing the inedible parts and pass it through a garlic press. Cut the chili pepper into small pieces. Make a mixture of garlic, ground basil, chili pepper, and salt.
Form layers in the jars with oil, garlic, chili pepper, and tomatoes, and finally the 2 bay leaves, fill with abundant olive oil up to 1 cm from the rim, creating a protective layer by pressing with the fork to expel the air.
Clean the jar rims and place the lids, let them rest for a few hours then check if more oil is needed.
Now close the lids and place the jars in a pot with the lids facing up. To prevent the jars from bumping into each other and breaking during cooking, insert a cloth between each jar.
Cover halfway up the jar with warm water and bring to a boil. Once boiling, cook for about 10 minutes.
Allow to cool upside down. Once cooled, check the lid capsule is lowered.
Store in a cool place for at least a month before enjoying your sun-dried tomatoes in oil.
