Rustic Pie with Sausage and Peppers. A savory main dish with a melty heart.
This recipe is ideal as an appetizer, single dish, or to enrich a buffet. Easy and quick to prepare, this rustic pie is also perfect as a single dish for a quick lunch, to take to the beach, or even for the lunch break in the office.
You can also enrich or vary it according to your tastes. And if you don’t have puff pastry, shortcrust pastry works just fine.

Ingredients
- 1 sheet puff pastry
- Half red bell pepper (small)
- Half green bell pepper (small)
- 9 oz sausage
- 3.5 oz emmenthal cheese
- 1 egg yolk
- as needed poppy seeds
- 1 tbsp extra virgin olive oil
- as needed salt

Steps
First, we wash the peppers, cut them in half, and remove the top cap, seeds, and filaments.
Cut them into strips and cook for 10 minutes in a large pan, together with a tablespoon of extra virgin olive oil. Once cooked, set it aside.
Peel the sausage and cut the emmenthal cheese into cubes.
Preheat the oven to 350°F. Unroll the puff pastry and place it with its paper on a baking tray.
Place the peppers in the center of the puff pastry and add the sausage and cheese cubes.
Cut strips from the sides of the puff pastry as shown in the photo.
Fold the top and bottom towards the center and then crisscross the strips.
Brush the surface with the beaten egg yolk and sprinkle with poppy seeds.
Rustic Pie with Sausage and Peppers
Bake and cook for about 25-30 minutes until golden brown.
