Sometimes I find an avocado at home that’s ripening too much, so I quickly prepare this delicious sauce that I then use as an accompaniment to soft legume patties or couscous patties, or I spread it on a golden slice of toast along with a nice fried egg. Perfect for enjoying with nachos, it is also great for dipping in raw vegetables like carrot sticks, fennel slices, or cucumbers. Absolutely try it with succulent grilled meat or fish, as well as in salads. In short, this sauce is really very good.
Avocado sauce is also prepared quickly, but if you have even less time, you can omit the boiled egg, and you’ll still get a very tasty sauce, just less dense.
A tip: did you know that the avocado seed can be grated and used to sprinkle on salads, main dishes, yogurt, or soups? A great anti-waste idea. Not to mention, you can always try to make it sprout!

- 1 avocado (ripe)
- 1 boiled egg
- 3 tablespoons Greek yogurt
- 2 tablespoons olive oil
- 1 pinch fine salt
- 1 lemon (juice)

Let’s Prepare the Quick Avocado Sauce with Yogurt
In a saucepan, add water and the egg, and cook it for 7/8 minutes from when it starts boiling. Then, run it under cold water and peel it.
Take the avocado and cut it in half, then remove the pit and scoop out the flesh by running a knife around the perimeter between the skin and the flesh, and then, with a spoon, remove the inside. Place it in a tall, narrow container suitable for an immersion blender.
Add the peeled and halved boiled egg, Greek yogurt, olive oil, a pinch of salt, and lemon juice. Start blending by moving the immersion blender up and down to incorporate air.
Blend until you get a smooth and homogeneous mixture. It will take about two or three minutes before our sauce becomes nicely creamy.
