Ingredients

  • 1 1/2 cups hazelnut flour (or almonds)
  • 1 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 2/3 cup butter
  • 1 egg
  • to taste ground cinnamon
  • 1 1/4 cups blueberry jam
  • 1/3 cup sliced almonds
  • 1 tbsp milk
  • to taste egg

How to Make Rolled Linzer Cookies

  • In a bowl, combine the hazelnut flour, all-purpose flour, sugar, grated lemon zest, and cinnamon.

  • Finally, add the butter cut into pieces and the egg, start kneading everything by hand.

  • Transfer the dough to a lightly floured surface and then form a smooth and soft dough, let it rest covered with plastic wrap for an hour in the refrigerator or 30 minutes in the freezer.

  • After the resting time, divide the dough into two equal parts and with the help of parchment paper roll them into two rectangles, about 1/2 inch high, then spread the jam on them.

  • Roll them starting from the longer side of the rectangle, making sure to seal the edges well, then let them rest in the freezer for 30 minutes, or in the refrigerator for 1 hour.

  • Cut with a smooth blade knife, making the cookies. Arrange them well spaced on a baking tray lined with parchment paper.

  • In a small bowl, beat the egg with the milk and brush the surface with a brush, then decorate with the almond slices.

  • Bake your rolled cookies at 355°F in static mode until golden brown, which will happen in about 12-15 minutes.

Storage and Tips

Rolled Linzer Cookies can be stored in a tin box for several days. They can also be frozen. If you can’t find hazelnut flour, you can blend hazelnuts in a mixer with a tablespoon of sugar taken from the dough ingredients.
