The other day I made this rice salad with zucchini cream for my son: a fresh, creamy, and quick recipe, ideal when it’s hot and you don’t want heavy dishes.
Just cook the rice, blend the zucchinis to get a velvety cream, and then add whatever inspires you or whatever you have in the fridge like eggs, tomatoes, avocado.
The beauty of this rice salad with zucchini cream is that it can be prepared in advance, served cold, brought to the beach, or enjoyed in the garden for a light and tasty dinner.

Ingredients
- 5.5 oz parboiled rice
- 2 tbsps black olives
- 7 oz zucchini
- 1 oz arugula
- 3.5 oz cherry tomatoes
- 2 eggs
- 3.5 pickled peppers
- 1 avocado
Steps
Boil the rice and let it cool.
Chop the zucchinis and blend them with an immersion blender, place them in a pan with a drizzle of oil and cook for a few minutes, you can also use it cold if you prefer.
Dress the rice with the zucchini cream, boil the eggs or cook them in the air fryer at 347°F for 8 minutes, peel and add them to the rice.
Add the olives, peppers, I used my homemade ones, cut the tomatoes, the avocado into pieces and add everything to the rice, also add arugula.
Add mayonnaise or oil and mix well.
