  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1 packet baking powder
  • 3 eggs
  • 1 cup butter (melted)
  • 1 cup sugar
  • 1 oz sliced almonds
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 3 Golden Delicious apples
  • 1 pinch fine salt
  • 1 vanilla bean
  • 1 tbsp powdered sugar

Steps

Preheat the oven to 350°F (static mode).

Butter and flour a 10 x 7 inch rectangular baking dish.

Slice 2 apples into wedges, cut 1 into pieces and drizzle with lemon juice, leaving them in a bowl

  • Using the electric mixer, whip the eggs with the sugar (set aside 1 tablespoon of sugar for the surface) until creamy, and it falls in ribbons from the beaters. Add the vanilla bean pulp, a pinch of salt, grated lemon zest, and then mix in the sifted flour and baking powder, almond flour, and continue to mix with a spatula. Gradually pour in the cooled melted butter and combine.

  • Add the diced apple, mix, and pour the batter into the pan. Place the apple wedges on top and sprinkle almond slices over and in between the wedges. Sprinkle with the reserved sugar and bake at mid-height for 45 minutes, ensuring it doesn’t burn. Turn off the oven and leave it with the door ajar for 5 minutes to let the steam escape. Remove from the oven and once cooled, sprinkle with powdered sugar.

    Pears or nectarines can be used.

  • Can a round pan be used?

    Absolutely, for this amount a 9.5-inch diameter pan is suitable. I used a rectangular one mainly for better portioning.
