Baked Crunchy Chickpeas

The baked crunchy chickpeas are a great vegan protein-rich snack, perfect to enjoy alone, for appetizers and aperitifs, or to add to salads, soups, and creams. A very easy and healthy recipe where the main ingredient is chickpeas, featured in many recipes on our blog like chickpea soup, chickpea meatballs or baked, veggie burgers, hummus and many others. In short, it’s no secret that we are fans of chickpeas, and that’s why we propose this recipe where chickpeas become so crunchy and crispy that they are really irresistible! To make them so crunchy it’s important to dry the chickpeas very well with a cloth or kitchen paper, add oil and then lots of spices and flavors according to your taste, and bake in the oven for 20 minutes or 30 if you want to reach extra crunchiness!
The recipe is very simple: we season the well-dried chickpeas with oil, spices, and aromas. Pour into a baking tray without overlapping them and bake at 200°C (392°F) for 20-30 minutes.

  • 1 1/2 cups cooked, boiled chickpeas

How to Prepare Crunchy Chickpeas

  • Drain the chickpeas well and pat them dry with kitchen paper.

  • Place them in a bowl, add the oil, and mix in all the spices and herbs you prefer. We used paprika, chili flakes, turmeric, curry powder, garlic powder, and oregano. Mix well, seasoning with salt.

  • Bake them in a preheated oven at 200°C (392°F) for about 30 minutes or until they are golden and crispy. You can enjoy the crunchy chickpeas hot or cold.

The baked crunchy chickpeas are great to eat right away, but if any are left over, you can store them for two days in an airtight container.

You can use any spice or herb you prefer in addition to those we indicated in this recipe, such as ginger, pepper, rosemary, thyme, etc.

You can also cook the chickpeas in an air fryer at 200°C (392°F) for 10-15 minutes, or in a pan for about ten minutes.

You can use either pre-cooked chickpeas in a can or dry chickpeas, to be soaked overnight and then cooked the next day in plenty of cold water.
