Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2/3 cup sunflower oil
  • 1.8 fl oz coffee
  • 1/3 cup water
  • 2 1/4 cups all-purpose flour
  • 1 packet baking powder
  • to taste coffee
  • 1 cup whipping cream
  • 1 cup mascarpone
  • 5.3 oz chocolate (shaved or chips)
  • to taste Nutella®

How to Prepare the Stracciatella Filled Cake

  • In a bowl, add the eggs and sugar. Mix with the electric mixer until you get a fluffy and frothy mixture.

  • Add the oil, coffee, and water. Mix with the electric mixer.

  • Add the flour and baking powder. Mix well, being careful not to create lumps.

  • Pour the mixture into a previously buttered and floured 11-inch mold and bake in a preheated oven at 350 degrees Fahrenheit. Let it cook for about 35/40 minutes. Please check the cooking times based on your oven.

  • Remove from the oven, let the cake cool completely, then cut it in half. Moisten the base of the cake with coffee or according to your taste.

  • In a bowl, add the cream and mascarpone. Whip with the electric mixer. Add the chocolate shavings and incorporate them with a spatula.

  • Fill the base of the cake and level. If you like, add small dollops of Nutella, spacing them apart. Use the tip of a knife to level them, incorporating them unevenly into the cream and mascarpone filling. Close the cake with the second layer.

  • Store in the refrigerator until ready to serve. (Let it rest for at least 2 hours). If you like, dust with powdered sugar before serving.

Storage

The cake can be stored in the refrigerator, covered, for 2 days. It is preferable to consume it within this time to best enjoy the freshness of the cream and mascarpone.

  • Can I substitute the coffee?

    If you don’t like coffee, you can replace it with milk or water. If you prefer a citrus version, you can use orange or lemon juice.

  • Can I substitute the Nutella?

    If you don’t like it, you can omit it or replace it with a pistachio spread or salted caramel.
