Today, some treats with a delicate and soft batter perfect for these carrot cupcakes with delicious cream cheese frosting!
Honestly, I’m not a fan of muffins or cupcakes; I prefer making cakes, but even thinking of an Easter recipe, I made these soft and decorated mini cakes.

Cupcakes and muffins ….two very similar preparations but with small yet clear differences
Cupcakes are smaller, always frosted, only sweet, served in the afternoon with tea or coffee, generally prepared using the “creaming method,” which involves creaming butter and sugar and then adding other ingredients: in essence, they are small cakes, not small sweets!
Muffins are larger and have a dome on top, with no special frosting, can be made with “savory” ingredients, enjoyed in the morning for breakfast, and prepared by combining dry and liquid ingredients.
Whatever you call them, they are excellent little treats that we can make with sponge cake batter, with yogurt, and much more!

- 1/2 cup vegetable oil
- 3/4 cup sugar
- 1/2 cup almond flour

FOR THE PREPARATION OF THE CARROT CUPCAKES RECIPE

In a bowl, I put the eggs with the sugar and with the electric whisks, I beat everything for a few minutes.
Slowly add the milk and vegetable oil, then add the sifted all-purpose flour with the instant cake baking powder.
Now, with a flexible spatula, add the almond flour and vanilla, and finally the blended carrot mix.
Mix well, incorporating all the ingredients into a homogeneous mixture.
Place the cupcake liners in the cavities of the muffin pan, filling them about 2/3 full, and then bake at 350°F (static mode), baking for about 25/30 minutes or according to the characteristics of your home oven.
Once baked, the treats with carrots and almonds are left to cool completely before preparing the cream cheese frosting.
Put in a bowl cream cheese with powdered sugar and mix everything using a spoon and stirring carefully.
Insert a star nozzle into the piping bag, fill with the creamy frosting, and decorate each cupcake, adding sugar carrots, sprinkles, or whatever you like!
