Ingredients
- 4 eggs
- 1 cup sugar
- 2/3 cup sunflower oil
- 1/3 cup orange juice
- 1/4 cup water
- 2 1/4 cups all-purpose flour
- 1 packet baking powder
- to taste orange juice (for soaking)
- to taste apricot jam (for filling)
- 1/2 cup whipping cream
- 1/2 cup mascarpone

How to Prepare the Cake Filled with Cream and Jam
In a bowl, place the eggs and sugar. Mix with the electric mixer until you get a fluffy and frothy mixture.
Add the oil, water, and orange juice. Mix with the electric mixer.
Add the flour and baking powder. Mix with the electric mixer.
Pour the obtained mixture into a 11 inch pan, previously greased and floured. Bake in a preheated oven at 356°F. Let it cook for about 35/40 minutes. Be sure to check cooking times based on your oven. Remove from oven, let cool, and once cooled, divide the cake in half.
Soak the base of the cake with orange juice or your preferred soaking liquid.
Spread a layer of apricot jam on the base and level it.
In a bowl, combine the cream and mascarpone. Whip everything well with the electric mixer.
Add the whipped cream and mascarpone to the cake and level it. Close the cake and dust with powdered sugar.
Storage
The cake can be stored in the refrigerator for 2 days in an airtight container. For best taste, it is advisable to take it out of the fridge at least 15 minutes before serving.

Can I use a different jam?
You can use your preferred jam. It’s also excellent with berries, cherries, peaches, or citrus fruits.
Can I skip the mascarpone?
If you prefer a lighter filling, you can use just whipped cream. For a different touch, you might also try a diplomat cream or a custard.
Can I replace the orange juice?
For soaking and in the batter, you can use diluted lemon juice with water, milk, or even liqueur (for an adult version)
