Ingredients for Strawberry Puff Pastry

  • 1 roll puff pastry (rectangular)
  • 2 tablespoons strawberry jam
  • 9 oz strawberries
  • 1 egg yolk
  • as needed brown sugar

Preparation of Strawberry Puff Pastry

  • Wash the strawberries, remove the leaves and cut them into slices. If you like, sprinkle with a few drops of lemon and a bit of brown sugar; I preferred to leave them plain to avoid an overly sweet taste.

  • Unroll the puff pastry and make longitudinal cuts on the edges “as in the video”. Spread the strawberry jam in the center of the dough, only 2 tablespoons, otherwise, it might leak out during baking.

  • Place the strawberries over the jam, then braid the strips of dough until the filling is completely enclosed, seal the edges well.

    If you like stuffed puff pastry, try the whole wheat pastries with apples and pine nuts.

  • Lightly beat the egg in a bowl, then brush the surface of the puff pastry. Sprinkle with brown sugar, transfer the puff pastry with all the parchment paper onto a baking tray.

  • Bake in a preheated oven at about 375/390°F, always adjust according to your oven. Cook for about 25/30 minutes, it will be ready when it turns golden brown. Before serving, let it cool slightly, a light dusting of powdered sugar and enjoy!

Storage and variations

The strawberry puff pastry can be kept at room temperature for one or two days covered. Be careful not to use too much jam and seal the puff pastry well before baking.

You can replace the strawberries with other types of fresh fruit, adding nuts or chocolate chips inside instead of jam.
