Sardinian Doughnuts, Traditional Recipe

Sardinian doughnuts are addictive. Today I share with you my mother-in-law’s recipe. They are delicious and practically melt in your mouth. As tradition, we use homemade lard, but you are free to replace it with butter or margarine. Sardinian doughnuts are made from a thinly rolled pastry dough. Flaky and tasty, I am convinced you will fall in love with them. For the filling, I used cherry jam, but you can replace it with the jam you like best. They are also delicious with Nutella.

Ingredients

  • 4 cups flour
  • 3/4 cup sugar
  • 2 whole eggs (plus one yolk)
  • 3/4 cup lard
  • 2 packets vanillin
  • 1 packet baking powder
  • to taste jam
  • to taste powdered sugar

Steps

  • Prepare the pastry by mixing all the ingredients in the bowl, knead by hand until a ball forms. Wrap it with cling film and let it rest in the fridge for about 30 minutes.

  • Then roll out one piece of dough at a time on the floured work surface. Use the appropriate cutters to make the doughnuts.

  • Transfer them to silicone mats (parchment paper will also work) and bake for about 15 minutes at 350°F. They should not get too dark.

  • Fill the part without a hole with jam and place the donut with a hole on top, allowing some filling to spill out.

  • Dust with powdered sugar and serve.
