Chocolate and dried fruit mendiants are homemade chocolate wafers, perfect to enjoy at the end of a meal or as a Christmas gift idea. The recipe is very simple, just melt dark chocolate, create disks to be topped with dried fruit as desired. I used hazelnuts, almonds, pistachios, and raisins, but they can be topped with other varieties of dried fruit, for example: blueberries, raspberries, cashews, or pieces of dried apple, cinnamon, and almonds.
Like the sugar-free chocolate pralines, chocolate mendiants are also a low glycemic index dessert. Just choose 70% dark chocolate which, combined with dried fruit, will give you sugar-free chocolate wafers suitable for everyone.

Ingredients to make chocolate wafers
- 1.75 oz 70% dark chocolate
- 3 drops sweetener
- 10 hazelnuts
- 3 blanched almonds
- 10 unsalted pistachios
- 0.35 oz sultana raisins (10 berries)
What you need
- 1 Small bowl
- 1 Bowl glass
- 1 Parchment paper
- 1 Tray
- 1 Hand whisk
- 1 Spoon
- 1 Knife
Procedure
Place the raisins in a small bowl, cover with lukewarm water, and let them rehydrate for 10 minutes.
Meanwhile, chop the chocolate, place it in the bowl and melt it for about two minutes at 300 W.
Cut the hazelnuts in half, slice the almonds into slivers.
Mix the melted chocolate with the whisk, add sweetener to taste, and mix again.Line the tray with a sheet of parchment paper, using the spoon, scoop some melted chocolate and create small piles which you will flatten with the back of the spoon. On each wafer, place a squeezed raisin, half a hazelnut, a pistachio, and an almond sliver.
Allow the chocolate to cool completely, until it is solid. Then, remove the mendiants from the paper and arrange them on a serving tray or in a glass jar.
