The recipe I prepared today is a fresh salmon fillet with asparagus, a light yet tasty dish, perfect for spring!
It’s a complete and balanced one-dish meal that combines the richness of salmon with the seasonality of asparagus, creating an ideal pairing for those looking for taste and wellness on the table.
The salmon fillet accompanied by asparagus, green or white as you prefer, is prepared in just a few minutes and is ready quickly without much effort in the kitchen!
I chose to thicken the cooking juices with a little cornstarch, but if you prefer, you can simply enhance the dish by adding a bit of extra virgin olive oil and a light squeeze of lemon to highlight all the flavors of the dish.
VARIATIONS OF THE RECIPE WITH FRESH SALMON AND SEASONAL ASPARAGUS
• in a pan if you prefer, we can cook vegetables and fish separately and then combine them only in the composition of the dish before serving it at the table
• with yogurt sauce that accompanies the dish and pairs well with salmon and asparagus, you can find the LABNA cream on the blog
• with turned potatoes, steamed or baked, to complete the dish
• marinated salmon before cooking with EVO oil, lemon, garlic, and parsley.

FOR THE PREPARATION OF THE BAKED SALMON FILLET WITH ASPARAGUS RECIPE
start by cleaning the asparagus, removing a bit of the tougher lower part with a vegetable peeler.
Now I place them side by side on the baking dish that should also hold the fresh salmon fillets.
Now pour dry white wine, extra virgin olive oil into the baking dish, and season everything with salt and pepper.
Then bake in a preheated oven at 375/390°F for 7/8 minutes.
Now to complete this light fish dish, I place the salmon fillets on the asparagus, which are now more tender and flavorful.
Add the clove of garlic and the lemon slices.
All that’s left is to season this quick and healthy salmon with salt and pepper and continue cooking for another 20 minutes, keeping in mind the thickness of the fish fillets.
Now that the salmon and asparagus recipe is finished, I can serve it at the table, and if you like, after filtering the cooking juices, add a little cornstarch (dissolved in a bit of water) and mix it in the baking dish, then sauce the fresh salmon fillets!
Bon appétit and happy cooking!
