  • 14 oz black rice pasta (black)
  • 9 oz salmon (fresh)
  • 2 oz fava beans (fresh shelled)

Let’s Prepare Black Rice Pasta with Salmon and Fava Beans Together

  • This step is very simple but requires a long cooking time; if you’re short on time, you can skip it.

    Take the cherry tomatoes, wash them, and cut them in half, then place them on a baking tray lined with parchment paper with the cut side facing up. Add salt and a grind of pepper (you can also add oregano if you like), the garlic head cut in half, and bake in a preheated oven at 284°F for 1.5 hours where they will slowly wilt.

  • Take the fava beans and shell them, then remove the skin to avoid any bitter taste. Try to use small, tender fava beans. Take the salmon fillets, remove the skin with the help of a knife, and then cut them into cubes. Finely chop the parsley after washing and drying it well.

  • Bring the water to a boil for cooking the pasta. Meanwhile, in a high-sided non-stick pan, pour the olive oil and add the peeled garlic clove and chopped parsley (leave a small portion to add at the end of cooking) and lightly sauté.

  • Add the diced salmon and cook over high heat for three or four minutes, then add the shelled fava beans, salt, and pepper and let cook for just under a minute, then turn off the heat.
