• MASCARPONE a very creamy cheese that will balance the other much saltier ingredients like feta;
• GREEK YOGURT to get a light and thick sauce.

Generally, the quiche lasts:
• in the fridge for about 3 days always covered with food wrap or sealed in an airtight container;
• at room temperature better to avoid, but at most half a day and if it’s hot… let’s forget it;
• in the freezer preferably already portioned in slices or squares for about 2 months. When it’s time to enjoy it, I recommend thawing it in the fridge and then heating it in the oven to have it fragrant and tasty.

FOR THE PREPARATION OF THE VEGETARIAN RECIPE SAVORY PIE WITH SCALLIONS AND FETA WITH SHORTCRUST PASTRY
So the first thing I do is gently stew the red onion/scallions, whichever we prefer and have in the fridge…
So I clean the scallions and cut them into fairly thin rings including a little green stem!I put a little extra virgin olive oil in the pan, and as it sizzles, I add the sliced onion, stirring and seasoning with salt and pepper, letting it soften for 7/8 minutes but as always, check yourself!
While the onions are softening on the stove, in a bowl, I put the ricotta, the spreadable cheese, the feta coarsely crumbled with my fingers, the grated cheese,
I mix these delicious ingredients and season with salt and pepper considering that the Greek feta is quite a salty cheese.Once the red scallions are cooked, I add them to the mixed cheese cream and blend the mixture well.
Keeping the protective parchment paper, I place the shortcrust pastry in my baking pan and make a few holes with a skewer or the tines of a fork, so it doesn’t puff up too much while baking.
Now I pour the onion and cheese cream over the entire shortcrust shell and level everything well.There was some dough left over, I didn’t feel like throwing it away, but I also didn’t feel like making designs with cookie cutters, so I just made some stripes to “close” the cheese and stewed onion filling.
Let’s cook the spring vegetarian pie with onions and feta by baking it in a static oven at 350°F for about 40 minutes, but as always, check the power of your home oven!
