- 3/4 cup granulated sugar
- 4 medium eggs (at room temperature)
- 1.1 lbs Golden apples
- 1 lemon (zest grated)
- 1 1/4 cups all-purpose flour
- 2/3 cup butter
- 1 packet baking powder
- to taste powdered sugar

Steps for Alessandra Spisni’s Apple Cake:
In the stand mixer or with electric beaters, beat the eggs with the granulated sugar until the mixture is frothy, almost white, and tripled in volume.
Melt the butter in a small saucepan and let it cool well.
Peel the apples, cut them in half and remove the core, then cut each half again in half and slice the apples not too thinly, placing them in a large bowl, add the grated lemon zest and mix well.
Add the now cooled butter and mix well to coat all the apples, then add the sifted flour with the baking powder, mix well so that all the apples are well coated with flour.
Finally, add the egg and sugar mixture, mixing well with the apples, trying not to deflate the egg mixture.
Line a 10.24/11.02 inches baking pan with parchment paper, pour the mixture and level it well, bake in a preheated oven at 338°F for about 40 minutes.
Cool the apple cake and before serving, dust it with plenty of powdered sugar.
Tips:
You can also use a smaller pan, in this case increase the cooking time by 5/10 minutes.
