The savory pie with eggplants and cooked ham is a perfect dish to serve as an appetizer, aperitif, or at a buffet dinner. It’s a flavorful dish that you can prepare in advance since it’s good both hot and cold.

For the preparation, I used gluten-free puff pastry, but you can use classic puff pastry. I filled it with cooked ham, eggplants, mozzarella, and Parmesan cheese.

Ingredients

  • 1 sheet puff pastry
  • 1 eggplant
  • 3.5 oz cooked ham
  • 1 mozzarella
  • 4 tablespoons Parmesan cheese
  • 1 cup tomato sauce

How to Prepare the Savory Pie with Eggplants and Cooked Ham

  • First, wash the eggplant and dry it. Trim the ends and cut it into slices about 1/4 inch thick. Heat a grill pan or a non-stick skillet. Place the eggplant slices on the grill pan and let them cook for about 3 minutes on each side. As they are ready, place the grilled eggplant on a plate and salt them. Set aside.

  • In a saucepan, add a drizzle of extra virgin olive oil and the tomato sauce. Turn on the stove and let the sauce thicken for a few minutes. At the end of cooking, adjust for salt.

  • In a 10.2-inch tart pan, place the puff pastry with parchment paper. Prick the bottom with a fork.

  • On the puff pastry base, distribute a layer of grilled eggplant, then a thin layer of tomato sauce. Cover with pieces of mozzarella, Parmesan cheese, and slices of cooked ham. Then continue with the other ingredients until finished: eggplant, tomato sauce, mozzarella, Parmesan… and so on.

  • Fold the edges of the puff pastry inward and bake in a preheated static oven at 356°F (180°C) and let it cook for about 25/30 minutes. The puff pastry should be golden and crispy.

  • (If you are using gluten-free puff pastry, brush the edge with extra virgin olive oil before baking).

  • When the savory pie is cooked, take it out of the oven and let it cool before slicing.

  • Serve yourself.

Storage

The savory pie with eggplants and cooked ham can be stored in the refrigerator for up to a couple of days.
