Ingredients

  • 1.2 lbs anchovies
  • 1 slice white bread (sandwich or rustic)
  • 2 tbsps breadcrumbs
  • 1 clove garlic
  • sun-dried tomatoes in oil (about 5-6)
  • 1 tbsp Taggiasca olives (or black olives)
  • 1 tbsp capers
  • parsley
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Clean the anchovies by removing the head and opening them to remove the central bone and guts. Rinse them well, then dry them with kitchen paper towels. You can have your fishmonger do the cleaning if you want to save time.

  • With the help of a mixer, chop the bread together with a clove of garlic and a sprig of parsley.

    Put the chopped mixture on a plate, add one or two tablespoons of breadcrumbs, salt, and pepper.

  • Line a baking tray (a pizza tray works perfectly) with parchment paper.

    Bread the anchovies with the aromatic mix on both sides, then arrange them on the tray. Drizzle with some olive oil, then add the chopped sun-dried tomatoes, olives, and capers (after rinsing them from salt or vinegar).

  • You can make a single layer or more, depending on the width of the tray.

    Put everything in a fan oven at 356°F and bake for 20-25 minutes. Adjust the time according to the thickness of the layers.

  • When the anchovies are cooked and the surface is slightly golden, turn off the oven and take them out.

    The Mediterranean-style baked anchovies are ready to be served… enjoy your meal!

Tips and Notes

You can use fresh cherry tomatoes instead of sun-dried, after removing the seeds.

You can use Taggiasca olives, Leccino olives, or black olives. The amount is indicative; you can add more or less according to your taste.

You can replace parsley with oregano, thyme, or other herbs to taste.

Do not overcook, otherwise the anchovies will dry out and become too dry. Always adjust according to your oven’s power.
