  • Portions: 2 pans of 11 inches in diameter
  • Cooking methods: Oven
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients for gorgonzola pizza:

  • 2 cups all-purpose flour
  • 2 cups Manitoba flour
  • 1 1/2 cups lukewarm water
  • 3 1/2 tbsp extra virgin olive oil
  • 2 tsp fine salt
  • 2 1/4 tsp dry yeast
  • 3 mozzarella balls
  • as needed tomato sauce
  • 5 oz gorgonzola
  • as needed fine salt
  • as needed dried oregano

Tools for gorgonzola pizza:

  • 2 Baking Sheets
  • 1 Bowl
  • 1 Knife

Steps for preparing and cooking gorgonzola pizza:

  • In a bowl, place the two flours, add the dry yeast, and mix well with a spoon, gradually add the lukewarm water, extra virgin olive oil, and when the dough starts to become homogeneous, add the fine salt.

Work the mixture with the spoon, then with your hands, bringing the dough toward the center of the bowl, cover the bowl with a cloth, and let it rest for 2/3 hours until doubled in size.

  • Grease two 11-inch diameter baking sheets and put half of the dough in each sheet, let it rest for 15 minutes then with oiled hands spread the dough across the entire sheet (the dough is soft and easy to work with).

In a bowl, put the tomato sauce, season it with salt, a couple of tablespoons of extra virgin olive oil, and a sprinkle of oregano if you like.

Spread the sauce over the base of the two pizzas, add the mozzarella balls previously well-dried and cut into small pieces, drizzle with a little oil, and bake at 392°F for about 15 minutes.

  • After the time has passed, add the diced gorgonzola, sprinkle with dried oregano, and finish cooking.

You can bake the two pizzas simultaneously (in this case, remember to switch the baking sheets halfway through) or one at a time.
