Chicken Breast and Eggplant Rolls

Chicken breast and eggplant rolls, but also zucchini or bell peppers, a great combination with vegetables just like chicken with potatoes! On October 2nd, besides Grandparents’ Day, the seventh edition of Roast Chicken Day is celebrated, a social marathon organized by white meat producers’ associations to promote these exquisite and excellent white meats. In its simplicity, roast chicken with potatoes beats even oysters and champagne, known and much appreciated by all cultures around the world. I myself remember that my grandfather would gather my family with uncles and cousins on August 15th and it was customary to cook chicken with potatoes and serve half a chicken per person, a true and beautiful family celebration. Today my favorite dish remains chicken breast to which I have added eggplants, simple oven-baked rolls, lactose-free and therefore also suitable for those who are intolerant.

Ingredients

  • 10.5 oz chicken breast
  • 7 oz eggplants (sliced)
  • 1 oz breadcrumbs
  • Half teaspoon paprika
  • 1.4 oz extra virgin olive oil
  • 1 teaspoon salt
  • to taste pepper
  • A few sprigs parsley

  • Toothpicks

Steps

  • I sliced the eggplants with the slicer (without removing the skin) to have thin and uniform slices, today it is possible to have this machine at home at affordable prices and of good quality, almost like professional slicers.

  • If you don’t have a slicer, you can cut the eggplants thinly using a suitable knife.

  • Sprinkle the eggplant slices with salt and extra virgin olive oil and place a piece of chicken breast over half of the eggplant slice, add another pinch of salt, olive oil, and parsley.

  • Roll the eggplants with the chicken breast inside and secure them with a toothpick.

  • Place the rolls on a baking tray with parchment paper, a pinch of salt, extra virgin olive oil, and breadcrumbs mixed with a teaspoon of paprika. Bake at 375°F for 25 minutes.

  • You can accompany your dish with a yogurt sauce like the Tzatziki, fresh and light.

  • The rolls are ready.

  • Can chicken breast and eggplant rolls be made with turkey slices?

    Yes, it’s possible. If you want to make them with white meat, turkey is as good as chicken.
