You can prepare these quick and tasty light sandwiches the day before for the next morning and store them in the fridge wrapped in plastic wrap. Ingredients for Quick and Tasty Light Sandwiches

  • 4 slices whole wheat sandwich bread
  • 10 cherry tomatoes
  • 3 tablespoons cottage cheese
  • Half tablespoon extra virgin olive oil
  • 1 pinch fine salt
  • 1 pinch garlic powder
  • 3 leaves fresh basil

Let’s Prepare Quick and Tasty Light Sandwiches Together!

  • Heat the non-stick pan over high heat, then toast the slices of whole wheat bread for 1 minute on each side. Once well toasted, place them on a cutting board.

  • In the same pan, pour the half tablespoon of oil, the cherry tomatoes cut into quarters, season with salt, pepper, and garlic powder. Cook for 4 minutes over high heat, stirring. After 4 minutes, turn off the heat, add the basil torn by hand, stir, and let cool.

  • When all the ingredients are cool, assemble the sandwiches. On two slices, place the seasoned cherry tomatoes and top with cottage cheese, cover with the remaining 2 slices of bread, lightly press, cut in half diagonally, and voilà, you will have 4 quick and tasty light sandwiches to enjoy anywhere and anytime!

  • To best enjoy the quick and tasty light sandwiches, I recommend wrapping them in plastic wrap and letting them sit in the fridge for at least 30 minutes before consuming!

VARIATIONS AND ALTERNATIVES

You can add 2 Cantabrian anchovies on top of the cottage cheese.

You can substitute the cottage cheese with diced fresh cheese.

Instead of cottage cheese, you can use 2 slices of turkey roast.
