- 12 plums (Stanley)
- 2 eggs
- 4.4 oz fruit yogurt (plum)
- 4.2 oz sugar
- 2 cups flour
- 1 packet baking powder
- 7 tbsp seed oil
- 1 lemon (zest)

Steps
After washing the plums, cut them in half and remove the pit, place the plums cut side down in a springform pan lined with parchment paper.
Cover the plums with sugar and bake them for 8 minutes at 356°F
Meanwhile, in a stand mixer, beat the eggs with sugar, add the yogurt and oil alternating them. Sift the flour and baking powder, grate the zest of one lemon and mix well, pour the mixture over the plums.
Even out the mixture with the spatula.
Bake in a convection oven at 356°F for 30 minutes.
Let the red plum cake cool before removing it from the pan.
Once cooked and sufficiently warm, open the springform pan and invert the red plum cake, removing the parchment paper.
Dust with powdered sugar.
