The Pork Neck Rolls, known as “bombette silane”, are small pork rolls typical of Apulian cuisine. The three main ingredients are pork neck (capocollo), pancetta and caciocavallo silano cheese. They are cooked in a pan, but for a lighter variation they can be baked in the oven at 392°F for 20-25 minutes.

Ingredients
- 6 slices capocollo (pork neck) (pork)
- 6 slices pancetta
- 6 slices caciocavallo silano (thinly sliced)
- 10 sprigs parsley
- 1 clove garlic
- 1/3 tsp fine salt (approximately)
- 1 pinch ground black pepper
- 2 tbsp extra virgin olive oil

Steps
Place the pork neck slices between two sheets of plastic wrap and pound them with a meat mallet until very thin but without tearing the meat. On each slice place the pancetta, thinly sliced caciocavallo and a chopped mixture of garlic and parsley. Season with salt and pepper. Roll up the slices, sealing the edges well and tightening them with your hands.
They should be small and secured with toothpicks. Pour the oil into the pan and once hot place the rolls in it; turn them every 5 minutes so they brown on all sides, keeping the heat low. After about 20 minutes they will be ready to serve.
