Ingredients

  • 2 cups all-purpose flour
  • 7 tbsps butter
  • 1/2 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1/2 teaspoon baking powder
  • 10.5 oz cookies
  • 1.75 oz hazelnut granules
  • 8.8 oz cherries
  • 5 tbsps unsweetened cocoa powder
  • 3 tbsps cherry jam
  • 2/3 cup powdered sugar
  • 20 g egg whites
  • 1 tbsp lemon juice

How to make the Cookie Tart

Procedure:

  • In a bowl, put the flour, baking powder, eggs, and cold butter.

  • Knead everything until you form a smooth and soft dough.

  • Then cover with plastic wrap and let rest in the fridge for 30 minutes.

  • In the meantime, prepare the filling by placing the crumbled cookies, cherries, cocoa, hazelnut granules, and jam in a bowl. Mix everything until you get a homogeneous mixture.

  • After the dough has rested, roll it out with the help of a floured sheet of parchment paper, try to obtain a sheet about 1/8 inch thick. Fill the tart base with the prepared mixture.

  • Then, cover with the second pastry sheet.

  • Glaze preparation: Put the egg white in a bowl with the lemon juice and powdered sugar. Beat well until you get a smooth and lump-free mixture.

  • Cover the surface of the tart with the prepared glaze.

  • With a toothpick, make lines like the lattice of the tart, then fill the created grooves with jam.

  • Bake your cherry cookie tart Neapolitan recipe in the oven with static mode at 340°F for about 35-40 minutes.
