Ingredients
- 4.2 oz mixed pasta
- 7 oz potatoes
- 2.5 oz smoked provola
- 1 carrot
- 1 stalk celery
- 1 onion
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- 2 cups water
- 0.7 oz tomato paste
- 1 tsp salt
- to taste black pepper
- 1 chili pepper (to taste)
- 10 leaves basil

Steps
Peel the potatoes and cut them into small pieces.
Similarly, chop the carrot, celery, and onion, sauté the garlic with the evo oil, and immediately add the onion, carrot, and celery mix.
Add the potatoes to the pan along with the vegetables and stir
along with the tomato paste.
Let it flavor for a few minutes and add 2 cups of water.
Cook for 10 minutes, adjust the salt, and add the pasta.
In the meantime, cut the provola, I preferred the smoked one, also into small pieces.
When the pasta is cooked, remove from heat and
add the smoked provola, stir, and let it rest for another 5 minutes, then serve the pasta with potatoes and smoked provola at the table.
