An incredibly easy yet truly delicious recipe with fresh seasonal asparagus, which is prepared in a few minutes and is a great side dish idea. The almond gratin asparagus is tasty and appetizing, first cooked in a pan (or boiled), then baked with breadcrumbs and sliced almonds. With their crispy crust, they are simply delicious, try them yourself!

Ingredients

  • 14 oz asparagus
  • 1 oz breadcrumbs
  • 0.7 oz sliced almonds
  • parsley (or other herbs)
  • grated Parmesan
  • extra virgin olive oil
  • butter
  • salt
  • pepper
  • garlic powder (optional)

Preparation

  • Wash the asparagus and remove the toughest part of the stem.

    Place them in a wide pot with a little oil and half an inch of water, add a pinch of salt and cook for 8-10 minutes (depending on size), or until tender yet firm (1).

  • Meanwhile, put the breadcrumbs in a small pan with a handful of chopped parsley (or other herbs) and a pinch of garlic if you like.

    Drizzle with olive oil and toast for a few seconds.

  • When the asparagus is ready, place them in a baking dish lightly oiled, trying to overlap them as little as possible.

    Sprinkle with the breadcrumbs, some Parmesan to taste, salt, and pepper.

    Finally, add the almonds and a few small pats of butter (2).

  • Place the baking dish under the oven grill (392-410°F) and gratin for 4-5 minutes, being careful not to burn the almonds.

Tips and Notes

You can also cook the asparagus in boiling water (in a special pot where they can stand upright), or steam them.

I recommend using a slice of stale bread or sandwich bread (instead of ready-made breadcrumbs), and grating it fresh.

You can season with parsley, thyme, oregano, marjoram, or a mix of herbs to taste.

If you don’t have sliced almonds, you can coarsely chop whole blanched almonds with a knife.
