I made it last night because my daughter returned from Dublin very late and famished (surprise, right? 😅) and I needed a quick, light dinner that she would really enjoy. So I sliced up two zucchinis, added some sliced mozzarella, a nice sprinkle of Parmesan… and off it went into the air fryer. But you can certainly use the oven too!
The result? A super flavorful side dish, with soft, stringy zucchini, the aroma of Parmesan detectable even before opening the basket, and mozzarella that melts with the first bite. Perfect as a vegetarian main dish, or as a fun idea to get even the most reluctant kids to eat their veggies.

- 2 zucchini (large)
- 7 oz mozzarella

Steps
Slice the zucchini with a peeler and place them on parchment paper, on the baking sheet if using the oven or in the air fryer basket.
Arrange them slightly overlapping, then add the mozzarella slices, a sprinkle of breadcrumbs, Parmesan, salt if needed, and a drizzle of oil.
Cover with another layer of zucchini slices and repeat the layering.
Bake under the grill for about ten minutes or in the air fryer at 350°F for 8 minutes or 10 if you like them crispier.
Alternatively, you can use a pan.
