Ingredients for a low glycemic index custard
- 2 cups partially skimmed milk
- 4 egg yolks
- 4.23 oz erythritol
- 1.41 oz cornstarch
- 0.71 oz inulin (long chain)
- 2 pinches lemon peel (dried)
- a quarter of a vanilla pod
- 1 pinch salt
Tools needed to make custard in the microwave
- 1 Microwave
- 1 Bowl glass
- 1 Hand whisk
Procedure
Place the egg yolks in the bowl, add the erythritol, and quickly work with the whisk. Add the cornstarch and inulin and mix again. Flavor with the lemon peel, vanilla seeds, and salt. Finally, add the milk in a thin stream while stirring well with the whisk.
Place the bowl in the microwave and start for 2 minutes at maximum power. Remove the bowl from the microwave and stir well with the whisk. Repeat this step twice. You will notice the custard is ready when it thickens. It will take about 6 minutes for a perfect custard. Stir well at the end of cooking and distribute in individual cups. Let cool and serve.
Extra tips for the sugar-free custard cooked in the microwave
To prevent an unsightly film from forming on the custard’s surface, press a sheet of plastic wrap against it and let it cool.
Gratinated custard in the microwave
Pour the still hot custard into ceramic molds and level it out. Let it cool well, then place them on a microwave rack. Grate the custard for about 10 minutes using only the grill function and then garnish with berries and serve.
Sugar-free crème brûlée in the microwave
Pour the custard, as above, sprinkle the surface with erythritol, and grill for about 10 minutes using only the grill function.
