Chicken bites with olives in the multicooker, a tasty and easy-to-prepare main course, with very tender and fragrant meat, a real delight for the palate.

Ingredients for Chicken Bites with Olives in the Multicooker:
- 1 chicken breast (about 1.76 lbs)
- 1 yellow onion
- 1 large carrot
- 1 celery stalk
- 4 tablespoons extra virgin olive oil
- 1 sprig rosemary
- 4 leaves sage
- 7.4 oz crushed tomatoes
- 1/2 cup vegetable broth
- 1/2 cup dry white wine
- 5.3 oz black olives (pitted)
- to taste fine salt
- to taste black pepper
- to taste all-purpose flour

Steps for Preparing and Cooking Chicken Bites with Olives:
First, prepare the vegetables: peel the carrot, dice it into small pieces; peel the yellow onion and dice it into small pieces; finally, remove the strings from the celery stalk and cut it into small pieces. Cut the vegetables into the same size to ensure even cooking.
Cut the chicken breast, remove any fat if present, then slice it into thick slices at least 1 inch thick, then cut each slice into strips and each strip into chunks. Repeat the same process with the other half of the chicken breast.
In a plate, place some flour and coat the meat, removing any excess flour.
In the multicooker, add the extra virgin olive oil, the vegetables, and set the SAUTÉ program, cook for a few minutes, then add the chicken bites, let them brown well, deglaze with the white wine, and when it has evaporated, add the crushed tomatoes and broth, season with salt and pepper.
Close the pot, seal the valve, set the PRESSURE COOKING program, and cook for 15 minutes. Once the time is up, turn off the pot, let it vent, and remove the lid.
Add the pitted black olives, stir well and reset the pressure cooking program for an additional 5 minutes.
Once the time is up, turn off the pot, vent it, remove the lid, stir the preparation well, and serve it hot.
