- 9 oz ricotta
- 10 1/2 oz cherry tomatoes
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 10 leaves basil
- to taste chives
- to taste oregano
- 1 clove garlic
- 1 lemon (zest)

Steps
Wash the cherry tomatoes and all the herbs.
Place the ricotta and halved cherry tomatoes on the microwave tray with parchment paper and add: the olive oil and salt, the basil with chives, oregano, and garlic clove. Finally, grate some lemon zest over the ricotta. To your taste, you can also add ground black pepper or spicy chili.
Place in the microwave for 20 minutes at maximum power crispy mode.
Finally, plate everything and serve with slices of rustic bread or breadsticks, pizza, or focaccia. Enjoy your meal!

What type of ricotta can be used?
All types, actually I didn’t specify which ricotta I used to allow you to choose your preferred one. I used buffalo ricotta, flavorful and nice and creamy to give the dish creaminess.
Can I prepare the ricotta and cherry tomatoes in the oven instead of the microwave?
Sure, you can bake the ricotta and cherry tomatoes in a convection oven at 350°F for 25 minutes, or static for 30 minutes. I also add the air fryer option, 350°F for 15 minutes.
