After the great success of the Vanilla Spritz Cookies and Chocolate Spritz Cookies, I decided to try them with lemon. The lemon spritz cookies have that delicate lemon flavor that I love. They are delicious. The lemon spritz cookies are very easy to make. Just equip yourself with a cookie press and you’re good to go. Preparing them is very easy. I used the planetary mixer but common electric whisks are also fine. This time, however, in the dough, I used not only butter but also my Homemade Lard and I must say that the result was really very good. Crumbly, they melt in your mouth. Perfect to accompany tea or coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 5 tbsp lard
  • 5 tbsp butter
  • 1/2 cup powdered sugar
  • 1 lemon (the zest)
  • as needed candied cherries

Steps

  • In the bowl of the stand mixer, whip the powdered sugar with the softened butter and lard. Beat for about 10 minutes until it is nice and fluffy.

  • Add the egg and continue beating for about 5 minutes until the egg is incorporated.

  • Add the lemon zest.

  • Lastly, add the flour. Beat for a few more minutes.

  • Transfer the mixture into the cookie press and choose the disk shape you like most. There are many options.

  • Form the cookies by simply pressing the handle. Continue this process until the dough is finished. Between fillings, you can also change shapes.

  • Add the candied cherries and let them rest in the fridge for 15 minutes. Then, bake at 356°F (180°C) for about 15 minutes.

  • Delicious.

They keep for days in a tin container.
