The Savory Leek, Potato, and Speck Pie is a recipe that came about by chance while I was shopping. At the deli counter, I noticed pre-packaged savory pies of various kinds, but I don’t like to buy industrial food, especially because I want to choose the ingredients myself, so I read what was needed and prepared it my way with homemade dough instead of puff pastry. The recipe is very easy and delicious, suitable for lunch outside the house or at the beach.

Ingredients
- 2/3 cups Manitoba flour
- 2.5 tbsps water
- 1 tsp milk
- 1 tsp extra virgin olive oil
- 1/4 tsp fine salt
- 2 leeks (cleaned, 7 oz.)
- 1 potato (medium)
- 1.75 oz sliced speck
- 1 oz grated Parmesan cheese
- 2 eggs
- 2.5 tbsps extra virgin olive oil
- 1/2 tsp fine salt

Steps
Pour the flour into a bowl, add the water, milk, and oil.
Also add the salt and start kneading. Form a dough ball that should rest 30 minutes wrapped in cling film.
Wash the leeks and slice them into rounds, brown them in a pan with 2 tbsps of oil and the potato cut into cubes. Stir and cook over low heat for 10 minutes, being careful not to let it burn.
Preheat the static oven to 428°F. In a bowl, crack the eggs, add the grated Parmesan cheese, the speck cut into strips, and mix. Add the leeks and potatoes and salt.
Take the homemade dough and roll it into a thin disk, starting with the rolling pin and then using the back of your hands. Grease the baking pan and place the disk so that it hangs 1.5 inches over the edge, pour in the mixture and lift the edge bringing it towards the center. Grease the surface with the remaining oil and bake, cooking in the middle for 30 minutes. Serve warm.
