Ingredients for Watermelon Granita
- 2.2 lbs watermelon (ripe)
- 1/2 cup sugar ((optional, depending on the sweetness of the watermelon))
- to taste mint (fresh leaves)
Tools
- 1 Hand Blender
Steps
Cut the watermelon into cubes, removing most of the seeds. If you don’t like them, remove them all, but it’s important to know that watermelon seeds can help counteract the glycemic index, quite sugary. They contain polyunsaturated fats, vitamins, especially B and C group, and are rich in minerals such as iron, zinc, magnesium
Place the cubes in a large bowl covered with plastic wrap in the freezer, turning occasionally for at least 4 hours or until completely frozen.
To make it even more delicious, I froze a banana cut into pieces and put it to freeze separately.
Blending:
Remove the frozen watermelon cubes from the freezer and put them in a blender or use a powerful hand blender.
Add the sugar, I prefer a tablespoon of honey, and if desired, also lemon juice.Blending with Hand Blender:
Use the hand blender to blend the watermelon until a fine and homogeneous consistency is achieved.
Make sure to work quickly to prevent the watermelon from melting too much.Serving:
Pour the granita into glasses or bowls.
Garnish with fresh mint leaves and serve immediately.
You can also put the granita in the freezer for a few minutes if you want an even icier consistency before serving.
Storage:
Refrigerator: If there is leftover granita, store it in an airtight container in the freezer. Before serving, let the granita sit at room temperature for 10-15 minutes and then mix it with a fork to break the ice crystals.
Tips:
Variants: Try adding a bit of lime juice or some basil leaves for an aromatic variant.
Sweetness: Adjust the sugar amount based on the sweetness of the watermelon and your personal taste.
Texture: If you prefer a coarser granita, blend for less time. For a finer consistency, blend longer.
Presentation: Serve the granita in chilled glasses to keep it cold longer.
Beverage: Turn the granita into a summer drink by adding a bit of soda or prosecco for a sparkling and refreshing version.
