Soft Fridge-Cleaning Cake

The soft fridge-cleaning cake is a clever, simple, quick, and delicious recipe!

This rustic dish is ideal to serve for a tasty dinner, as a second course paired with a salad, or simply cut into cubes for an appetizer. It’s also a great idea to use up fridge leftovers.

For my recipe, I used up some ham, salami, and parmesan, but you can use prosciutto, salami, bacon, or mortadella, cheeses like asiago, provolone, or Swiss, and feel free to get creative by adding vegetables to make it vegetarian.

Ingredients

  • 3 eggs
  • 2 1/2 all-purpose flour
  • 1/3 cup olive oil
  • 1 1/8 cup milk
  • 1 oz parmesan
  • 2.1 oz ham
  • 2 zucchini (small)
  • 1 packet instant yeast for savory preparations
  • 3.2 oz salami

Tools

  • 1 Cake Pan
  • 1 Grater

Steps

  • Take a coarse grater and grate the zucchini, then set them aside. In a bowl, whisk the eggs, then add the olive oil, milk, and continue mixing.

    Sift the flour and gradually add it to the mixture, then add the cured meats, grated parmesan, and finally the zucchini, squeezing them a bit.

    Pour the prepared mixture into a baking tray lined with parchment paper and bake at 356°F in static mode for 40 minutes. Always do the toothpick test before taking it out of the oven.

    As every oven has its own cooking times and methods, if the toothpick comes out clean and dry, the cake is ready to be removed from the oven. Let it cool slightly and cut into slices.

    The soft fridge-cleaning cake keeps well for several days in a glass dome.

Storage

The soft fridge-cleaning cake can be stored under a cake dome until the next day. You can freeze it in single servings.
