The sweet puff pastry quilt with ricotta is a very easy dessert that can be prepared in a few minutes.
The crispy and flaky puff pastry shell and the creamy filling will win you over at the first bite.
It’s a perfect dessert for breakfast, a snack or as a dessert after a meal. Also great as a dessert for Sunday lunch.
This puff pastry quilt is made using a rectangular roll of puff pastry. To fill it, you’ll need ricotta and jam. For decoration, just make small incisions with a knife: the dessert is ready to be baked.

Ingredients
- 1 roll puff pastry (rectangular)
- as needed jam
- 3.5 oz ricotta
- 1 egg
- as needed milk (or egg for brushing)

- 1 Spoon
- 1 Knife
- 1 Brush
Steps
Unroll a rectangular puff pastry roll and spread a thin layer of jam (about 3.5 oz) on half of it. You can use the flavor you prefer.
In a bowl, place the ricotta and an egg. Mix with a spoon.
Spread the ricotta cream over the jam and smooth it out well. If desired, you can sweeten according to your taste.
Using the parchment paper provided with the pastry, fold it over.
Seal the edges well with a fork.
Using a knife, make cuts first horizontally and then vertically to create small squares.
Brush the surface with beaten egg or milk. Transfer everything onto a baking tray lined with parchment paper. (You can use the one provided with the pastry).
Bake in a preheated static oven at 350°F. Let it cook for about 20/25 minutes. The pastry should be crispy and golden.
Once ready, sprinkle with powdered sugar and cut the squares along the previous cuts.
Let cool and serve.
