Speck rolls with gorgonzola and pears, this is a super quick and really easy recipe to make. In this case, I didn’t want to give exact quantities because everything will depend on our tastes. For example, loving gorgonzola a lot, I will surely fill the roll by putting more cheese, compared to those who might want the pears to prevail. Let’s personalize them as we see fit. A delicious appetizer or aperitif that is not only very good but also very charming and ideal to serve on special occasions, such as Christmas. Delicious nonetheless all year round.

Ingredients
- thin slices of speck
- as needed gorgonzola
- as needed pear
- as needed walnuts
- as needed honey

Preparation
Wash the pear thoroughly under running water, as we’ll use it with the skin on. Cut it into wedges, remove the core, and slice it first into thin slices and then into strips. Coarsely chop the walnuts.
Lay a slice of speck on the cutting board, add a chunk of gorgonzola, two strips of pear, and a quarter of a walnut kernel.
Roll the slice tightly into a cylinder, then cut it in half using a sharp knife.
Place on a serving plate, drizzle with honey, and sprinkle with the chopped walnuts we’ve prepared.
Serve our Speck Rolls with Gorgonzola and Pears immediately as an appetizer or aperitif.
Tips
The speck and gorgonzola rolls will keep for a few days in the fridge but will soften a lot and darken. Therefore, I don’t recommend preparing them well in advance, at most an hour.
Store them in a ceramic or glass container with an airtight lid so that they don’t absorb odors and flavors from other foods in the fridge.
I have never tried freezing them!
