Radicchio with pears, parmesan, and honey, a delicious side dish to serve during the Christmas holidays and beyond. I like it so much that I prepare it like this throughout its seasonal period. Easy, quick, beautiful, ideal even for those who are not very familiar with cooking and want to make a good impression with little effort. Moreover, it goes well with any type of dish and can also be served as an appetizer if cut into small portions. However, I recommend not preparing it too far in advance because the vegetables wilt easily. Prepare each ingredient, keep in the refrigerator, and assemble only at the last moment.

Ingredients
- 14 oz red radicchio
- 1 small pear
- 8 walnut halves
- 1.5 oz parmesan
- 1 tbsp honey
- 1 lemon juice
- 2 tbsp extra virgin olive oil
- to taste salt and pepper

Preparation
Cut the radicchio in half, wash it under running water without removing the leaves, and let it drain in a colander. Once the radicchio is well-dried, cut it into strips and place it in a bowl.
Wash the pear thoroughly, dry it, cut it in half, and remove the core. Use a sharp knife to slice it thinly without peeling it. Put the slices in a bowl and sprinkle them with lemon juice to prevent browning.
Shave the parmesan into flakes and coarsely chop the walnuts. At this point, you can dress it with extra virgin olive oil, salt, and freshly ground pepper if desired.



Add the walnuts, parmesan, pears with all their juice, honey, and mix all the ingredients well.
Serve our Radicchio with Pears, Parmesan, and Honey, placing it on a serving plate, garnishing it with a few pear slices, walnut, and serve immediately.
Advice
The radicchio salad can be stored in the refrigerator for at least one day, but it will lose its texture and the pear will darken further.
For this reason, I suggest assembling it at the last moment, preparing each ingredient separately, and adding the pear only at the last moment.
If someone is allergic to walnuts, they can always replace them with other types of nuts: pine nuts go very well.
