Apple fritters with yogurt, a recipe that will captivate you at the first taste, a very different texture compared to the classic grandmother’s fritters. When you prepare them, it will seem like making apple spoon cookies, then they are fried and at the first bite you will discover an explosion of flavors and aromas.

Ingredients for apple fritters with yogurt:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 whole egg (at room temperature)
- 1 pinch fine salt
- 3 tbsps granulated sugar
- 1/2 cup Greek yogurt
- 3 tbsps vegetable oil
- 1 apple
- 1 tsp ground cinnamon
- to taste lemon juice
- 1 tsp lemon zest
- to taste granulated sugar
- to taste ground cinnamon

Steps for preparing and cooking apple and Greek yogurt fritters:
Peel the apple, cut it in half, remove the core, and cut it into small cubes. Add a splash of lemon juice and a tablespoon of sugar, mix well, and let it rest for 15 minutes.
In a bowl, place the whole egg at room temperature, a pinch of salt, the remaining sugar, and a sprinkle of cinnamon. Use the whisk to beat the mixture until it becomes frothy. Add the Greek yogurt and 1 teaspoon of grated lemon zest, and mix the ingredients well.
Add the apples to the mixture (do not add the liquid formed), mix well, then add the sifted flour with the baking powder.
Mix well then start working the dough with your hands. Unlike classic apple fritters, the dough resembles cookie dough that needs to be handled by hand.
Form cylinders of about 40/50 grams (1.4/1.8 oz), you will get 15/16.
In a frying pan, heat some oil for frying. When it’s hot, cook the fritters. I recommend not using too high a flame because they need to cook well inside; otherwise, with too high a flame, the outside might be golden while the inside is still raw.
When they are well cooked, place them on a plate with paper towels to absorb excess oil.
On a plate, mix granulated sugar and ground cinnamon, and then roll the warm apple fritters in this mixture.
Serve the fritters freshly made or at room temperature.
