Sandy mushrooms, a very simple, light, and very tasty side dish, great to accompany meat or vegetarian second courses. You can use different types of mushrooms (I chose cardoncelli in this case), just sauté them in a pan for a few minutes, add the aromas and breadcrumbs, and briefly bake them in the oven (or in an air fryer). Cooked this way, the mushrooms will be soft inside with a tasty crust on the outside… you can serve them on any occasion because in their simplicity they adapt to all menus.

Ingredients
- 9 oz mushrooms (cardoncelli, pleurotus, champignon, or others)
- 2 tbsp breadcrumbs
- 1 clove garlic
- herbs (thyme, parsley, marjoram, or others)
- extra virgin olive oil
- salt
- pepper

Preparation
Clean the mushrooms by removing any soil residues. Rub them with a damp cloth or rinse them quickly, then slice them.
Place them in a pan with a drizzle of oil and a clove of garlic. Cook them for a few minutes over medium heat, seasoning with salt and pepper (1).
Transfer them to a bowl, add a tablespoon of breadcrumbs and a handful of herbs.
Mix well, then place them on a baking tray. Sprinkle the surface with another tablespoon of breadcrumbs and a drizzle of oil (2). If desired, you can add a little grated Parmesan cheese.
Place the tray in the oven at 375-400°F (or under the grill) and bake for about 7-8 minutes.
Alternatively, you can place the tray in the air fryer and cook at 400°F for 6 minutes.
In any case, keep an eye on the cooking to avoid burning the mushrooms.
The sandy mushrooms with herbs and breadcrumbs are ready, serve them hot or warm as a side to main dishes.
Tips and Notes
You can use herbs as desired, fresh or dried: thyme, parsley, marjoram, rosemary, mint, etc. If you like, you can add a pinch of chili pepper.
You can use different types of cultivated mushrooms: cardoncelli, pleurotus, champignon, pioppini, etc.
Pre-cooking in a pan helps to soften the mushrooms and eliminate excess moisture.
