Goulash in the Multicooker

Goulash in the multicooker, a traditional Hungarian dish that requires a long cooking time, now made modern with cooking in the multicooker or pressure cooker without losing flavor.

Delicious meat bites cooked with plenty of spices, onions, and good broth, a dish that will win you over at the first taste.

Ingredients for Goulash in the Multicooker:

  • 1.76 lbs beef chuck
  • 1.1 lbs yellow onions
  • 0.5 cup red wine
  • 1.06 cups beef broth
  • 4 tbsps extra virgin olive oil
  • 1 tsp sweet paprika
  • 1 tsp ground cumin (leveled)
  • 2 leaves bay leaf
  • 1 sprig rosemary
  • 4 leaves sage
  • 1.41 oz tomato paste
  • to taste all-purpose flour
  • to taste fine salt

Steps for Preparing and Cooking the Goulash:

  • Peel the onions, divide them in half lengthwise, and slice them very thinly; you can also use a mandoline.

    In the multicooker, set the BROWN program, add the extra virgin olive oil, rosemary sprig, and the sage and bay leaves. When the oil is hot, add the onion and cook it for 5 minutes, stirring often.

    Place the flour on a plate and coat the beef bites, removing any excess flour.

  • After the time has passed, add the meat, brown it well, and deglaze with the red wine. When the wine has evaporated, add the ground cumin, sweet paprika, tomato paste, and broth, and season with salt.

    Stir the ingredients well.

  • Put the lid on, close the valve, and set the PRESSURE COOK program for 30 minutes at 248°F.

    After the time has passed, turn off the multicooker, release the pressure, remove the lid, stir well, and serve.

    Goulash pairs excellently with polenta.

  • PREPARATION WITH A CLASSIC PRESSURE COOKER:

    You can easily prepare goulash with a pressure cooker; the cooking times are the same, just follow the multicooker recipe but using the classic pressure cooker instead.

You can also add juniper berries and, if you like, a couple of potatoes; in this case, after 20 minutes of cooking, release the pressure, add the potatoes, and continue cooking under pressure for another 10 minutes.
